Recipe 2: Cranberry Salsa

Today’s recipe is from my friend  and favorite dog sitter, Becky Priest. It’s a twist on salsa that’s perfect for the season. Enjoy!

Cranberry Salsa

1 bag fresh/frozen cranberries, 12 ounce
1 granny smith apple, peeled and cut in a few chunks
1/2 large red pepper, cut in chunks
1/2 med. red onion, cut in chunks

Pulse/chop above ingredients in food processor

Mix:
3/4 c. sugar
1/3 c. apple juice
3 TBSP chopped fresh cilantro
2 TBSP chopped pickled jalapenos
1 tsp grated lime zest

Pour over chopped ingredients and mix well.
Cover and refrigerate a few hours (til chilled).
Serve cold w/ tortilla chips
