Recipe 7: Strawberry Bread

More sweeties for your Christmas feast! I’m embracing the sugar bowl for the rest of the season…

This lovely recipe is from my new friend and Pilates ninja, Wendy McLean. Thanks Wendy!

This is an old southern recipe from Nashville.

Because it’s so old, you can’t find the 10-oz boxes of frozen strawberries (which were slightly mushy & perfect for this). So if you buy the perfect whole frozen strawberries we have now, you need to cut/smush them so the pieces are small enough for bread and so you can squeeze out the juice to set aside for the cream cheese.

3 C. flour
2 C. sugar
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/4 C. vegetable oil
4 eggs, well beaten
Two 10-oz packages frozen strawberries

Defrost strawberries. Save 1/2 cup juice for the spread.
Mix all dry ingredients. Make a well in the center of dry ingredients & pour all liquid ingredients in. Mix thoroughly by hand.

Grease & flour or line with greased aluminum foil 2-3 loaf pans. Or I prefer to spread it out among several small loaf pans for more even cooking.
Bake at 325-350 one hour or until done in center.

One 8-oz package cream cheese
1/2 c. strawberry juice
Soften cream cheese to room temperature. Add strawberry juice, creaming until smooth.

Keep those recipes coming girls. Does anyone have any easy appetizers to share?
